mmmm… Shortbread!!
At the start of every Christmas season, my family starts begging for me to make batch upon batch of delicious shortbread! Over the years, I’ve tried many different recipes, but a few years ago I stumbled across THE BEST SHORTBREAD RECIPE EVER!!! I thought that I would share it with you all, since it has been such a hit in our house!
1 cup butter, softened
1/2 cup confectioners sugar
1/4 cup cornstarch
1 1/2 cups all purpose flour
- Preheat the oven to 375 degrees (190 degrees Celsius)
- Whip butter with an electric mixer until fluffy. Stir in the confectioners sugar, cornstarch and flour. Beat on low for 1 minute, then on high for 3 to 4 minutes. Drop cookies by spoonfulls two inches apart on an ungreased cookie sheet.
- Bake for 12-15 minutes in the oven. Watch that the edges don’t brown too much. Cool on a wire rack.
